Chinese are fond of entertaining guests with tea. The tea seems simple, but it contains much knowledge. Apart from being particular about making tea, people also pay great attention to pouring tea, tasting tea and adding tea. It’s necessary to know some tea languages in China to avoid the embarrassment caused by not understanding these “code words”.
一、“酒满敬人,茶满欺人”
因为酒是冷的,客人接手不会被烫,而茶是热的,满了接手时茶杯很热,这就会让客人之手被烫,有时还会因受烫致茶杯掉下地打破了,给客人造成难堪。
1. “Full wine respects others while full tea teases others”
Wine is cold and guests will not be scalded when picking up it. Tea is hot and cup is also hot with full tea, so the guests may be scalded and even throw down the cup due to scald, which will make the guests embarrassed.
二、“先尊后卑,先老后少”
人家跟前说声“请喝茶”,对方回以“莫拘礼”、“莫客气”、“谢谢”。如果是较多人的场合,杯不便收回,放在各人面前桌上。在第一次斟茶时,要先尊老后卑幼,第二遍时就可按序斟上去。对方在接受斟茶时,要有回敬反应: 喝茶是长辈的,用中指在桌上轻弹两下,表示感谢; 小辈平辈的用食、中指桌面轻弹二次表示感谢。
2、“Superiors before inferiors and elder before younger”
If the host says that “please drink tea”, the guest can say “don’t stand on ceremony”, “don’t stand on scruples” and “thank you”. Under the occasion of many people, it’s inconvenient to take back the cups and the cups are put on the desk before each person. When pouring tea for the first time, respect the elder, then menial and younger. When pouring again, the tea can be poured in order. When the guests accept the poured tea, they should return the salute. If the guests are elder, they can flick the desk twice with middle finger to show gratitude. If the guests are younger or of the same generation, they can flick the desk twice with forefinger and middle finger to show gratitude.
三、“先客后主,司炉最末”
在敬茶时除了论资排辈,按步就方之外,还得先敬客人来宾然后自家人。在场的人全都喝过茶之后,这个司炉的,俗称“柜长”(煮茶冲茶者)才可以饮喝,否则就对客人不敬,叫“蛮主欺客”、“待人不恭”。
3、 “Guests before family members and stoker at last”
When toasting tea, apart from in order of seniority, it’s necessary to toast guests before own family members. Only after all guests drink tea, the stoker (tea brewer) can drink tea; otherwise, it shows disrespect on guests.
四、“强宾压主,响杯檫盘”
客人喝茶提盅时不能任意把盅脚在茶盘沿上檫,茶喝完放盅要轻手,不能让盅发出声响,否则是“强宾压主”或“有意挑衅”。
4、“Rub cup on tea tray means oppression on host”
When the gusts pick up cup, they should not rub the cup on tea tray. After drinking tea, they should put down the cup gently and avoid noise of cup; otherwise, it means “oppression on host” or “deliberate provocation”.
五、“喝茶皱眉,表示弃嫌”
客人喝茶时不能皱眉,这是对主人示警动作,主人发现客人皱眉,就会认为人家嫌弃自己茶不好,不合口味。
5、“Frown while drinking means dislike”
When the guests drink tea, they should not frown, as it means warning on host. If the host finds that the guests frown, the host will think that they dislike the tea.
六、“头冲脚惜(音同),二冲茶叶”
主人冲茶时,头冲必须冲后倒掉不可喝。因为里面有杂质不宜喝饮,本地有“头冲脚惜(音同),二冲茶叶”之称,要是让客人喝头冲茶就是欺侮人家。
6、 “Pour away first tea soup and then brew for drinking”
When the host brews tea, the first tea soup should be poured away without drinking, as it contains impurities. There is a saying that “pour away first tea soup and then brew for drinking”. Making the guests drink the first tea soup means humiliating them.
七、“新客换茶”
宾主喝茶时,中间有新客到来,主人要表示欢迎,立即换茶,否则被认为“慢客”,“待之不恭”。换茶叶之后的二冲茶要新客先饮,如新客一再推卸叫“却之不恭”。
7、 “Change tea for new guest”
If a new guest comes when the host drinks with other guests, the host should show welcome and change tea immediately; otherwise, it will be deemed as “neglecting guest”. The second brewing of tea should be firstly drunk by new guest. If the new guest declines repeatedly, it will be disrespectful.
八、“暗下逐客令”
本地群众热情好客,每以浓茶待人,但有时因自己工作关系饮茶时间长会误工作或是客人的话不投机,客人夜访影响睡眠,主人故意不换茶叶,客人就要察觉到主人是“暗下逐客令”,抽身告辞,否则会惹主人没趣。
8、 “Imply order for guest to leave”
People always entertain guests with strong tea to show hospitality. However, sometimes drinking tea for a long time will delay work or the conversion gets disagreeable, and visit in the evening influences sleep, so the guest will not change tea deliberately. At this time, the guest should be aware that the host implies order for guest to leave, then the guest should farewell.
九、“无茶色”
主人待茶,茶水从浓到淡,数冲之后便要更换茶叶,如不更换茶叶会被人认为“无茶色”。“无茶色”其意有二,一是茶已无色还在冲,是对客人冷淡,不尽地主之谊;二是由于上一点引申对人不恭,办事不认真,效果不显著,欲有“某人无茶色”。
9、 “No tea color”
When the host entertains with tea, the tea always turns from strong to light. After being brewed for several times, the tea should be changed; otherwise, it will be deemed as “no tea color”. There are two meanings for “no tea color”. Firstly, if the tea is still brewed without tea color, it means indifference to guest. Secondly, it means disrespect to others and not working earnestly.
十、“茶三酒四秃桃二”
本地人习惯于在茶盘上放三个杯,是由于俗语“茶三酒四秃桃二”而来,总认为茶必三人同喝,酒必须四人为伍,便于猜拳行酒令;可是外出看风景游玩就以二人为宜,二人便于统一意见,满足游兴。
10、 “Three people for tea, four people for wine and two people for traveling”
People always put three cups on the tea tray, as there is a saying that “three people for tea, four people for wine and two people for traveling”. In other words, it requires three people to drink tea and four people to drink wine for finger-guessing game. If traveling outside for sightseeing, two people are proper for same opinions and happy journey.
